Who is black with grey stitching for?
The rider who wants one pair that does everything. Grey on black goes to work, goes on the bike and goes out at the weekend without ever looking wrong. It is a step less anonymous than a fully tonal shoe and a step quieter than the blue, which makes it the safest choice in the range.

What resoling actually saves you
Most motorcycle footwear is glued. The sole is bonded to the upper, and when the bond fails or the tread wears through, the shoe is finished no matter how good the leather still is. That is the normal life cycle: buy, wear out, throw away, buy again.
A Goodyear welted shoe breaks that cycle. The upper, the welt and the sole are stitched together, so a cobbler cuts the stitching, lifts the worn sole off and stitches a new one on. The leather upper is untouched. In practice the upper on a well-kept pair outlasts several soles, which means the question is not how long the shoe lasts but how many times you are willing to resole it.

Is a handmade motorcycle shoe worth it over a cheap one?
It depends on how long you keep things. A cheap glued motorcycle shoe is the better buy if you replace footwear every couple of years anyway. A welted leather shoe is the better buy if you would rather own one pair for a decade and have it resoled, because then you are paying once for the upper instead of four times.
The honest answer is that this is not the cheapest way to get certified footwear. Plenty of shoes pass EN 13634:2017 for a third of the price, and they will protect your feet.
What you get for the difference is full-grain leather instead of coated split or synthetic panels, a sole you can replace instead of a shoe you have to, and a fit built on a properly scaled last rather than a stretched one.
